To make a delicious Indian biryani, begin by marinating 500 grams of washed basmati rice in water for about 30 minutes. In a separate bowl, marinate 500 grams of your choice of meat (such as chicken or lamb) with yogurt, ginger-garlic paste, and a mix of spices including cumin, coriander, and garam masala for at least an hour. Heat oil in a large pot, add sliced onions, and sauté until golden brown. Then, add the marinated meat and cook until tender. Once the meat is cooked, layer in the soaked rice, adding water (double the rice quantity) and salt to taste. Bring to a boil, then simmer and cover the pot with a tight lid for 20-25 minutes. Finally, fluff the biryani gently with a fork, and serve hot, garnished with fresh cilantro and fried onions. Enjoy this flavorful dish with raita or salad!
